Product Description

One of three trademarked coffee profiles from Volcano Coffee Company of Pocos de Caldas, St. Domingos was developed as "the sweet one". This coffee is a mix of three varieties, Mundo Novo, Yellow Catuaí and Acaiá, strains that give Latin American coffees their trademark flavor profile. The fruits are only picked during peak sugar-sap flow, and dried in the sun with the skins on. The result is a coffee profile so high in natural sweetness that it is ideal for coffee lovers who don't want to sweeten their coffees to enjoy them.

Velvety-smooth brewed hot, and stunningly flavorful and sweet as an iced coffee. Pocos de Caldas is a unique volcanic terroir, so rich in minerals the springs are touted as healing water. The angle of the caldera is such that sun hits the coffee bushes head-on for 6-8 hours then shuts off like a light switch as it travels over the tip of the volcano. This traps the sugar sap in the fruit, which convert this to flavor compounds and help the plants grow healthy and strong.

In essence, St. Domingos is a very complex, full-palate coffee with so much natural sweetness that it it probably our best coffee for drinking black, whether hot or iced. Notes are milk chocolate and butter. It is exceptional clean and triple-sorted.
