Amazon.com This is a Japanese chef's knife, a low-tip design with a broad blade and a slightly curved cutting edge. For Asians, this knife is the same kitchen workhorse as a French chef's knife is for Europeans. Its cutting edge being less curved, it provides little rocking action, but for straight-down slicing and precise chopping, it's superb. So that food doesn't stick to the blade, which is called a granton, it is ground with alternating hollows on each side. The hollows create air pockets, allowing food to fall away cleanly.
