Recipe :?Bird? Nest Soup with Rock Sugar
Preparation time: 10 minutes
Cooking time: 40 minutes
[Serving for 2-persons]

Ingredients:
1-2 pieces bird's nest
2 mugs of hot water
10 slices of ginseng (optional)
3 table spoons of rock sugar for taste

Directions:
Soak the bird's nest pieces in a bowl of cold water for 1/2 to 1 hour? until it is soft.

?

Add the soaked bird's nest into hot water and throw in the ginseng slices into an inner stewing pot. Cover with lid.
Place stewing pot inside a larger pot such as a slow cooker. Double-boil for about 1/2 to 1 hour. When the bird's nest is cooked to your desired texture? stir in rock sugar for taste and cover the pot again for about 5 minutes to allow the sugar to fully dissolve. Serve at room temperature or even chilled.

For best results? use boiling water for both the inner and outer pot. The water in the other pot should cover at least 3/4 of the height of the inner pot. The stewing time begins counting when the water in the outer pot starts to bubble.
