Assam Laksa is a Peranakan medley of hot and sour fish soup with noodles, and has been ranked 7th in CNN’s list of World’s 50 most delicious foods. Penang Assam Laksa Paste can also be used to grill, bake or or stir-fry seafood.

You Will Need
1 pack of Penang Assam Laksa Paste (250g)
Fresh fish (or canned mackerel)
Fresh pineapple (or canned)
Cooked laksa noodles
Mint leaves
Cucumber
Lettuce
- Boil the fresh fish and debone.
- Using the fresh fish, boil fish in 1 litre of water. Add in Penang Assam Laksa Paste.
- Add juice from the canned pineapple to the soup, and bring to boil.
- Put together a bowl of cooked laksa noodles and garnish with fresh mint, cucumber, lettuce, pineapple and cooked fish meat.
- Pour in the laksa soup and serve. Makes 5 portions.
Storage Tips
Store any unused portions in an airtight container for 3-5 days in the refrigerator.
Can be kept in the freezer for up to a month.
