The Senzo Classic Collection knives are constructed from a 33 layer complex Damascus with a VG10 core clad with 16 soft layers on either side. These incredibly sharp knives' edges are easy to maintain, and are a little heavier than standard Japanese knives. The added weight is the result of cold forging the blade from a thicker than normal blank (4mm, 0.16in) and compressing it with 3000 pounds per sq. in. of pressure and then pressed again with a Tscuchime mold. These knives are dense, tough, sharp, and have indents in the top that make it easy to keep fatty, oily, and starchy foods from sticking to the knife. The steel of the knives is separated from the hardwood handles by a thin, red, heat-resistant ring that allow the steel and wood to safely expand and contract at different speeds in extreme temperatures. Note: Not to be used for any kind of twisting or prising. Cut only on wood or HDP. Do not allow knives to be abused as screwdrivers, tin openers or for any use other than food preparation.
