How Coffee is Brewed in South India
In South India, coffee is brewed with a metal device that resembles two cylindrical cups. The upper cup (with a tiny hole at the bottom) is loaded with fresh ground coffee mixed with chicory. The coffee is gently compressed while hot water is poured in. Next, a lid is placed on the top while freshly brewed coffee slowly drips into the cup at the bottom. This brew is generally stronger than western "drip style" coffees.
