What is Peach Gum

Peach Gum or Peach Resin is a kind of sticky substance produce from the peach tree. The composition of peach gum is collagen, galactose, rhamnose, amino acids, etc.  The color of the peach gum is pale yellow or golden peach.  The gelatine like peach gum is generally tasteless and it usually prepare as a nourishing dessert.



What are the benefit of Peach Gum

Peach gum has been described as a civilian bird nest. However, the price is so much lower compare to bird nest. The most essential benefits found in peach gum are:

How to choose peach gum

 

Natural peach gum is different in shape and sizes. Color is pale yellow.  May see some impurities stick on it.

Man-made peach gum looks brighter red in color. Minimum impurities.

 

 

How to store:

Keep it in a cool, dry place.

How to Prepare Peach Gum:

Soak the peach gum for at least 15 to 20 hours till it turns soft. Put in large quantity of water into a bowl as shown in picture.

30g of peach gum is sufficient for 3 – 4 serving.

 

 

 

After 5 hours of soaking. Continue to soak till no hard lump.

 

After 20 hours of soaking, all the peach gum has turned soft.  The size has enlarged to 8 – 10 times.

 

Remove the impurities and any of the black dirty parts in the peach gum.

Clean it in a basket and wash thoroughly.

 

Cooking Recipes:

Peach gum only take about 30 minutes to boil.  Do not overboil it as it will dissolve and become a jelly like liquid.  However, you can choose to double boil with varieties of ingredients.

Recipe | Peach gum, snow fungus and pear soup

Ingredients (serves 2):

15g of peach gum, soaked for at least 15 hours

10g snow fungus, soaked in plenty of water until it blooms

1 snow pear (Ya Li 鸭梨)

15g mixed apricot kernels (nanbeixing)

Rock sugar to taste

Method:

  1. Remove all the impurities in the peach gum, wash and drain.
  2. Peel the pear and cut into half, remove the core.
  3. Snip the snow fungus into little florets.
  4. Put all the ingredients into a double boiler pot, and double boil for 2 hours.
  5. Serve hot for best effect.

This dessert can use boiling method also if too troublesome to boil,  just need to cut the pear into cube and boil for at least an hour.  Pour in peach gum into the boiler and boil for half an hour.

NOTE: Mixed apricot kernels or nanbeixing is a mixture of the larger, sweeter heart-shaped "southern" apricot kernels, and the smaller "northern" kernels with its bitter almond flavor. You can buy the mixture from medicine shops, groceries or from larger supermarkets.

 

 

 

Recipe | Peach gum with bird nest soup

Ingredients (serves 2):

10g peach gum, soaked for at least 15 hours

1 bottle of bird nest

Rock sugar to taste

Method:

  1. Remove all the impurities in the peach gum, wash and drain.
  2. Pour in a bottle of bird nest into the double boiler, add in peach gum, rock sugar.
  3. Double boil for 2 hours.
  4. Serve hot for best effect.

 

 


 

Recipe | Peach gum with papaya snow fungus and pear soup

Ingredients (serves 2):

15g of peach gum, soaked for at least 15 hours

10g snow fungus, soaked in plenty of water until it blooms

One small papaya

1000 ml water

Rock sugar to taste

Method:

  1. Remove all the impurities in the peach gum, wash and drain.
  2. Peel the papaya, remove the seeds and cut the papaya into bite size.
  3. Snip the snow fungus into little florets.
  4. Bring 1000 ml water to boil, add in snow fungus, boil for half an hour, put in peach gum, boil for another half an hour, put in papaya and rock sugar, boil for 20 minutes, off the flame.
  5. This dessert can serve hot or cold.
