Kome Koji is a sweeter type of miso made with plenty of malted rice! Since its aging period is shorter, the taste is also lighter.


Tofu and Negi Miso Soup Recipe (2 servings):

Ingredients:
Any of our Marutaka miso paste - 3 tablespoons
2 stalks of Negi (green onions) - to taste
Tofu block - 1/2 block
Fried tofu - to taste
Water - 2 cups
Dashi stock - 2 teaspoon


Directions:

  1. Add 2 cups of water to a pot and bring to the boil.  Add the dashi stock.
  2. Bring to a low simmer. Add the miso paste. Do this by putting it in a strainer and dipping it into the stock while stirring so that it dissolves easily.
  3. Slice the tofu into 2/3 inch cubes and slide them into the soup, and heat slowly until it begins to simmer again (about 2 minutes).
