Hamachi Kama is the collar of yellowtail fish (Hamachi). It is the most fatty and juicy part of the fish and there are two in each yellowtail (one per side).



If you like grilled fish, nothing quite comes as close to satisfying this, like the taste of a good piece of grilled Hamachi collar. Contains one whole collar for grilling. It is best when simply grilled, with a sprinkle of salt, although you might choose to add a little lemon or ponzu/soya sauce. TIP: If you find it difficult to grill, it tastes just as good, lightly sauteed plainly with some salt.
