Hanasaki crabs, sometimes also known as Spiny King or Queen痒crabs, look like King crabs but only slightly smaller with a boxier physique. They are caught off the eastern coasts of Hokkaido, and are harvested only at specific times of the year between May to September.

At first glance the crab may look imposing with spines all over like a porcupine, but you will quickly realise the shell is actually quite soft, unlike the mud crab you usually get here in Singapore, and you can separate the meat from the shell without too much effort. The meat has a very rich taste, and is good for eating on its own or making soup stock.
