Native to Jamaica, jerk seasoning is traditionally used to season chicken and pork, but you can really use it on just about everything from fish and beef to shellfish and tofu. The heat here is pretty mellow, about a mild. To use: coat meat lightly with oil, then rub jerk seasoning on.
