Saffron is a spice. It is dried stigma of the saffron flower known as saffron crocus. Saffron crocus grows well in the Mediterranean region and blossoms in the fall season. It is picked by hand and it takes roughly 150 flowers to make 1 gram of dried saffron. Hence, weight by weight, it is more expensive than gold.
Cooking Tips:
1. If you taste saffron in your dish, you’ve added too much. Add a little pinch so your guests would ask…what’s that?
2. When cooking with saffron, use plain oil such as grape seed oil or granola oil. Do not use oil which is flavored. The taste and aroma in good olive oil will compete with saffron.
