Niizawa Sake Brewing founded in 1873, the brewery is famous for its main brand "Hakurakusei." The goal is to create "the ultimate sake to enjoy with food"; the very finest quality sake to accompany a meal. Mr. Niizawa, a head of the brewery, has a very keen sense of taste and has won many tasting competitions since he was in university. All their sake is kept below -5℃ at all time in order to preserve fresh, delicate taste. One of the sakes is also served by Japan Airlines in its first class cabin. It is one of the breweries devastated by the Great East Japan Earthquake in 2011. Its main building was completely destroyed and had no choice but to move to another place, however, Mr. Niizawa and his staff got over this difficulty with their spiritual strength, supported by many volunteers from all over the world.

This sake is made from contract farming rice "Hitomebore" which literally means "love at first sight". The pleasant balance of acidity like grapefruit and modest sweetness produces refreshment ideal for summer. The taste is light and the aftertaste is short.
