Preparation

1) Pre-soaking the buckwheats make it more digestible and lessen the amount of phytic acid which can block some nutrients. Pre-soaking it also helps shorten the cooking time.

2) Add buckwheat to a bowl with 3 to 4 times the amount of water.

3) Let it soak overnight or at least 6 hours.

4) After soaking, the buckwheats become milky, place it in a colander and rinse under running water, stirring occasionally, until it becomes less milky.

5) If pre-soaking is not desired, then simply rinse it before cooking. 

6) Alternatively, it can also be toasted in a dry pan to bring out more flavor.

Method of cooking: Boiling

1) Add about 1/4 to 1/2 cup of veggie stock or water to a large pan or a medium pot.

2) Boil the veggie stock or water then add in the pre-soaked and rinsed buckwheat.

3) Cook it for about 3 to 5 minutes, stirring it occassionally until tender.
