The main reason for decanting wine is to aerate it, or allow it to "breathe". The decanter is meant to mimic the effects of swirling the wine glass to stimulate the oxidation processes which trigger the release of more aromatic compounds. In addition it is thought to benefit the wine by smoothing some of the harsher aspects of the wine (like tannins or potential wine faults like mercaptans).

The role of decanting is to allow the wine to have full contact with the air. The wine that had been stored for many years, may have an unusual smell, taste and you may not be able to directly experience the real taste of the wine.  The general practice is to pour out an open bottle of red wine into the decanter and allow it to breath for sometime. This is to let the wine and indoor air have full access and breath. Then you can pour out the wine from the decanter to drink.

Decanters have been used for serving wines that are laden with sediments in the original bottle.

Wine from the bottle is poured into the decanter in order to separate wine containing the sediment, from a larger volume of wine, which is free of such sediment. In the process, the sediment is left in the original bottle, and the clear wine is transferred to the decanter. These sediments could be the result of a very old wine or one that was not filtered or clarified during the winemaking process.
