

How to Tell the Different Type of Mushrooms Apart ?

Generally speaking, any Chinese Black Mushroom can qualify as a ‘fragrant mushroom’, while winter mushrooms (supposedly better in the colder months) are regarded as higher quality, and the ‘flower mushrooms’ held to be the best of the lot.
Fragrant Mushrooms (香菇), are exceptionally thin, with little curl at the edges and, while cheap, are definitely not the best quality. The mushrooms will also be slightly darker and usually Do Not have a strong woody aroma.
Winter Mushrooms (冬菇) are "meatier" with small lines / cracks on the surface of the mushroom caps. This are generally higer quality in order to be rated being ‘winter mushrooms’.
Flower Mushroom (花菇), are the ones with the highest quality and is characterised by the distinct ‘cracked’ surface pattern, thus giving rise to the name of Flower Mushrooms. They have just nice woody aroma and possess high nutritional values. Our Mushrooms belong to the type of Snow Flower Mushrooms, a higher grade of Flower Mushrooms. Each is carefully picked and harvested and picked only when they are 3 - 4 inches wide.
These are the best to buy but can be expensive.
