OOCHI GOLDEN BLACK 

2 years fermentation

Ingredients: Kagoshima Brown Rice, Akitakomati organic rice, oligosaccharide, brown sugar from Okinawa and honey
Natural spring water which is rich in minerals is being used for the fermentation.

Double fermentation -
First stage, steamed rice is mixed with Koji(starter) and natural water.
Saccharide moromi is formed
Live enzyme, called Shubo is added to turn the sugar to alcohol (Sake)
Sake fermentation takes another month.


Second stage
Sake mixed with vinegar and heated, process will takes few weeks
and ready for the slow fermentation and aging.

 Fermented in earthen jug.  Naturally fermented, no alcohol has been
during the fermentation.  
Longer fermentaion period allows for the accummulation of non toxic acetic acid bacteria.
