2015 base wine was tank fermented, fined and filtered. Then a secondary tank fermentation in a pressure tank created the start of this sparkling wine. To add complexity, and extra 15% of 17 year old Semillon-Pinot Noir on lees was transferred in, giving a complexity of just over 2.5 years on lees.
