熊本県内にある契約農家さんの生姜畑は土からこだわり、丹精込めて栽培された「しょうが」は高知県産の生姜に比べ水分量が少なく香りや風味が強いのが特長です。
◆The ginger farm at the contract farm in Kumamoto prefecture uses select soil

生のショウガには９４パーセントの水分が含まれています。
特殊な乾燥機で時間をかけて低温乾燥させると「濃い」ウルトラ蒸し生姜となります。
『蒸し生姜』とは生のショウガを一度 蒸してから１０時間かけて低温乾燥させることで一般的な乾燥生姜よりも香り成分や辛味成分を多く含み強力にカラダの芯から温めます。
◆Fresh ginger is 94% water.
When a special dryer is used to dry them at low temperature， they become "ultra ginger.

"Ultra ginger" is created by first steaming them， and then dried over 10 hours at low temperature.
It is a more powerful dried ginger than a standard dried ginger， in terms of the level of aroma and the spicy flavors.
