Receipe for Fresh Milk Tarts

Ingredients for tart shells:

60g butter, room temperature
40g icing sugar
1 egg yolk
1tsp milk
120g plain flour

a drop of vanilla essence

Ingredients for filling:
236ml milk
60g icing sugar
2 egg whites
Stir the milk filling ingredients thoroughly till well blended. Filter and set aside.

Method:

1. Cream the butter and icing sugar till white and creamy.

2. Add in the egg yolk and milk and blend well with the butter.  

3. Add in flour and vanilla essence, then knead into a dough in your Dough Kneading Bag. Chill dough in fridge while still in dough bag for 25 minutes.


4. After 25mins,  remove dough from fridge and take out from dough bag.

5. Cut dough into 8 circles with your Dough Cutter.

6. Place tart circles into tart mould or cupcake baking pan. Make sure that the edge of the dough
is slightly taller than the mould.  Ensure even thickness of dough.

7. Pour the milk filling into the tarts till 3/4 full.  Bake in preheated oven at 180 degree c for  25 minutes.
