A healthier way to bake gluten free Years ago, I began to question standard gluten free flour ratios after realizing they contain nearly half their weight in added starch, even though gluten free grains have as much starch as wheat. Added starch creates a strange texture in bread that you''ve probably been frustrated with for years. Now, it''s possible to bake real bread without gluten, while benefiting from the inherent flavor, protein, and fiber of ancient grains. Directions
Classic sandwich loaf Ingredients 1½ cups warm milk 2 teaspoons active dry yeast 3 large eggs 3 1/3 cups (400 g) jovial No. 2 whole grain gluten free bread flour 4 tablespoons melted butter 1 tablespoon sugar 1½ teaspoons salt
In a large bowl, beat the milk, eggs, butter, sugar and yeast together.
Add the flour, and then sprinkle the salt on top.
Mix with spatula until the dough comes together.
Cover the bowl with plastic wrap and let stand for 45 minutes.
Generously grease 8½ x 4½-inch loaf pan. Spoon the dough in the pan. Smooth out the top of the loaf with a wet rubber spatula. Cover the pan with buttered plastic wrap. Let rise for 3 minutes.
Preheat the oven to 375°F.
Bake for 40 minutes. Let the loaf cool in the pan for 15 minutes. Turn out the loaf onto a cooling rack and let cool for 2 hours before slicing. *For a dairy and sugar-free sandwich loaf, substitute water for the milk, substitute olive oil for the butter, and omit the sugar.Free OfGluten.
