Recipe:-

 

Chasoba noodles with traditional accompaniments

Serves 6

 

INGREDIENTS:-

 

450gm dreid green tea soba noodles

1 tsp seasame oil

40gm seasame seeds, roasted.

 

DIPPING SAUCE:-

 

1 tbsp katsuo Boshi(bonita flakes)

1/3 cup shoyu (Japanese soy sauce)

1/3 cup mirin (Japanese sweet rice wine)

1/2 tsp caster sugar

 

METHOD:-

-cook noodles in boiling water for 4 minutes or until all dente, drain and rinse under cold water, then drain well.Transfer to bowl and toss with seasame oil and seeds. Carefully hold nori sheeet, between tongs, over a medium gas flame, for 1 minute or untill roasted. Cool, then using kitchen scissors, cut into 2mm - wide strips.

- for dipping sauce, combineall ingredients and 1 1/2 cups water in a small saucepan and simmer for 5 minutes, remove from heat, cool, then strain through a fine sive.

- pile noodles e  qually on plates, scatter with nori ,Spring Onion , wasabi patse, then serve accomanied.
