Cha Soba noodles are Soba noodles made of buckwheat flour (soba-ko) and wheat flour (komugi-ko) with the added ingredient of fresh Green Tea leaves (Ryokucha or Ocha). In Japan Cha Soba is considered a delicacy and is only consumed on very special occasions.

Green Tea is considered by many to have many significant health benefits including high levels of antioxidants, polyphenols, theanine, as well as a wide variety of vitamins and minerals.

When it is cooked color of the noodles becomes fresh green and the tea flavour is enriched . It is good to enjoy as cold noodles withy Shouy-base sauce or miso.
