Raw materials are locally, rice grown without using pesticide in mountain village in Kyoto · Tango and underwater flowing from the mountain.
It is pure rice vinegar made just of it as raw material.
Using that new rice, Mr. Takeshi puts a mushrooms (moromi) in his warehouse, and from that ice creates vinegar with the old style "stationary fermentation" and "long-term maturation".
For the first time since rice crafting for more than two years, we have kept a rare and vigorous recipe now.
Also, use 200 grams per liter of vinegar, 5 times as much rice as "rice vinegar" can be displayed.
Because rich rice is used as a raw material, it has a strong and rich taste.
It adds depth and richness to the dish.
