Fermented for 3 years in a thoroughly regulated setting with humidity, temperature, and oxygen level set just right for Sanyacho fermentation. The extract is fermented in traditional pottery for 4 months out of those 3 years, after which undergoes a low-temperature fermentation for the rest of the period.
