FAQs
Does a high vegetable intake cause the body to become “cold”?
No. In ancient times, people believed it was very important to warm and invigorate the body’s yang and prevent the body from becoming too cold, or yin. This is because conditions back then were not good, and as a result, most people did not eat enough protein. To keep warm in the winter, they ate lamb and other meats to accumulate as much fat as possible in their bodies. This way of life is in stark contrast to the overconsumption of fat and cholesterol prevalent today, which has caused health issues like obesity and cardiovascular disease. Therefore, eating a wide variety of plant foods makes perfect sense in today’s context. Furthermore, modern dietary habits cause an excessive intake of omega-6 fatty acids. This, in turn, causes the human body to be in a constant state of inflammation. Eating more plant foods like fruits and vegetables is good for alleviating inflammation and restoring balance to our bodies.

How many vegetables should a person eat a day?
According to an online survey in China, 95.3% of people eat fewer than five types of vegetables a day. Both the amount and the variety of vegetables people eat are seriously lacking. In truth, the modern diet should consist primarily of plant foods. Nutritional Immunology recommends that at least two out of three daily meals be vegetarian. Also, for every five dishes on the dining table, ideally four should be vegetarian. In addition, Nutritional Immunology discourages deep frying and other cooking methods that use a large amount of oil.

Would eating large amounts of the same vegetables every day help one to obtain enough nutrients?
Many people assume they will attain good health so long as they follow a vegetarian diet. The truth is, eating just one or a few types of plant food is not enough. People who eat this way may not take in sufficient amounts of nutrients. Each type of fruit and vegetable has a unique profile of nutrients. These different plant-based nutrients work hand in hand to provide the body with comprehensive nourishment and to keep disease at bay. For instance, cancer formation is a complex process, so eating just one or a few types of phytochemicals is not sufficient to stop cancer formation in its tracks; these malignant cells can continue to grow. Each type of plant contains its own unique phytochemicals, antioxidants, and polysaccharides—each of these can help stop a certain part of the cancer formation process. Obtaining a good mix of nutrients by eating a wide variety of plant foods helps to nourish and maintain a robust immune system that can safeguard health and put a stop to the different stages of cancer formation.

It is ideal to eat a wide array of multicolored fruits and vegetables to obtain a rich variety of nutrients to nourish the immune system. This can boost one’s immunity to fight against disease.

Some people overindulge in meat and do not eat enough vegetables. Is this healthy?
Excessive meat intake is harmful to the body. Meat eaters should include a large variety of fresh fruits and vegetables in their diets to offset the harmful effects of animal-based foods on the body.

Are green vegetables the most healthful and nutritious vegetables?
The colors of fresh fruits and vegetables indicate different plant-based nutrients. The more colors there are in a diet, the better for the body, as the variety means one is consuming a more comprehensive mix of nutrients. Consume a rainbow diet of vegetables each day. This means eating vegetables of many colors, much like those of the rainbow.

Does eating a vegetarian diet guarantee adequate nutrition?
Not all vegetarian food is healthful and nutritious. Fried vegetables, for instance, are high in calories and cholesterol due to the large amount of oil used during deep-frying. This burdens the body and offsets the nutrients in the vegetables. Also, the type of oil used during cooking is often unhealthy. Furthermore, the heat from cooking strips away part of vegetables’ nutritional value and causes nutrient loss.

Are vegetables more nutritious raw or cooked?
Most vegetables are best eaten raw. Cooking has an adverse effect on most vegetables—it destroys the nutrients and enzymes in food and alters both the structure and digestibility of food. Vegetables are rich in phytochemicals and antioxidants, but most of these are intolerant of high temperatures, so they are very easily damaged during cooking. An example of one such vegetable is the beet, which loses at least 25% of its folate content as well as large quantities of its vitamins after it is cooked. Eating vegetables raw maximizes nutrient retention for optimal health benefits.

However, adding heat to certain vegetables can be a good thing. Cooking tomatoes increases their lycopene content. Lycopene in cooked tomatoes is more easily absorbed by the human body than lycopene in raw tomatoes. Even then, however, cooking tomatoes lowers their vitamin C content.

Is eating raw or cooked vegetables better for disease prevention?
Compared to eating cooked vegetables, there is a stronger inverse relationship between eating raw vegetables and contracting gastrointestinal and respiratory cancers, according to an article published in Cancer Epidemiology, Biomarkers & Prevention. Raw vegetables are also better for lowering the risks of certain cancers and chronic diseases.

Are vegetables better boiled or steamed?
Boiling vegetables causes water-soluble vitamins to leach into the cooking water, thus lowering the vitamin content of the boiled vegetables, resulting in a bowl of vitamin-rich soup. In contrast, steaming vegetables retains more nutrients because there is no direct contact between the vegetables and water. That said, steaming still causes nutrient loss.

Nutritional Immunology recommends eating vegetables raw whenever possible. Cooked vegetables should be consumed as soon as possible. Cooked vegetables lose around 25% of their vitamin C content after 24 hours in the fridge. It is also advisable to avoid unhealthy cooking methods like deep frying.

Which is the most nutritious: frozen, freeze-dried, or fresh vegetables?
There is no direct link between the nutritional content of vegetables and whether or not they have been frozen. In fact, it has everything to do with the time the vegetables are picked and how long they are stored.

Generally, vegetables sold in the supermarkets are harvested before they are ripe; they have not reached their peak nutritional value. This is to take into account the time needed for their transportation and storage. These vegetables are also losing nutrients as they sit in the produce aisle.

Nutrients can be better retained if vegetables are harvested during their prime and frozen immediately. Freeze-drying vegetables can better retain their nutrients because they contain very little moisture.

The nutritional value of vegetables is not affected by whether or not they are frozen. However, frozen vegetables are not as tasty as their fresh counterparts.

Why are freeze-dried fruits and vegetables more expensive than their fresh counterparts?
Freeze-drying requires strict controls every step of the way. Plants are first flash frozen and dried in a vacuum chamber where the temperature and pressure must remain constant. There are two steps involved in the drying process, so freeze-drying is a time- and energy-consuming process. For example, it takes three to four days to freeze-dry a strawberry. Freeze-drying sliced strawberries requires 14 to 16 hours. The process of freeze-drying is expensive. Therefore, the prices of freeze-dried fruits and vegetables are higher than that of their fresh counterparts.
