Coconut sugar is made by evaporating the nectar of the coconut palm blossoms, a highly sustainable resource which is beneficial to the ecosystem. To create coconut sugar crystals, the nectar from the coconut palm is hand-harvested by traditional sugar farmers. They climb twice daily into the canopy of coconut palms to gather the nectar from the blossoms. The collected nectar is kettle-boiled into a rich caramel syrup, then dried and ground into crystals.
