 Hatcho miso, the heartiest of miso, is made from soybean, koji and sea salt certified organic by OCIA. Cooked soybeans are formed into balls inoculated with koji spores, encouraging grow of latobacillus, fermented in wooden kegs for 36 months with less water and salt. Compared with other misos, hatcho miso has the highest protein and lactic acid content. Use in dishes, miso soups or mix with other misos.
