Chocolove Belgian chocolate chips are a premium couverture chocolate. That means the chocolate has more cocoa butter than regular chocolate chips. Chocolove chips have about 35% cocoa butter, compared to a leading brand which has less than 28%. The 35% cocoa butter is a balance between being good for cookies and good for coating and dipping. Because of the higher cocoa, this 11 oz box of chips works great in a recipe calling for 12 oz.
