Seaweeds have been a food source since prehistoric times and are as commonly used in Japanese cooking as garden vegetables. Seaweeds are a good source of minerals, such as iodine, calcium (2-3 times that of milk) and vitamin B12. Due to the enzyme and mineral content of seaweeds, they can help the body eliminate effects of animal fat and radioactive / chemical wastes we absorb through the environment. They have also been proven effective in preventing arthritis, nervous disorders and endocrine system malfunction. Arame is a black seaweed that grows abundantly in the Sea of Japan, hand harvested from May to August. It is then cooked for 7 hours, sun-dried, and sliced thinly for easier use. It has similar texture and consistency as hijiki, but with a noticeably milder flavour and aroma. Arame is an excellent source of vitamins A, B1 & B2 and protein. Preparation : Wash well and soak in water till soft. Use in miso soup. Retain nutrient-rich water for use in other recipes. Storage : Keep in cool, dry place. Also available in 500g packing. |
