White balsamic not covered with dishes made from only grapes is a dream of Malpighi as a seasoning for seafood, vegetables, fruits, etc. It was also an attractive ingredient for chefs.
The raw grape is the white grape Trebbiano di Spasina species specially produced by Modena and uses the best one.
Preliminary uses only whole natural grapes, no additives at all.
Grapes are slowly pressed slowly over time, become transparent white liquids, and filter out liquids and solids.

This is called a moss (grape juice), put in a keg of Tonelico wood and aged for 5 years.
