Red wines are made entirely from red grape varieties, and the colour comes from the grape skins. Red wine is made by fermenting the grape juice, skins and seeds together (and sometimes even the stems!) and then pressing the wine. The ripeness of the grape berries, use of whole bunches, including the stems and method of pressing influence the style of wine made. Red wines are fermented at higher temperatures than white wines – usually 28-30 degrees Celcius.
