We found Ojio Cacao Nibs hidden deep in the rainforests of the low lying La Costa Region of Ecuador. The region produces Arriba Nacional Fino De Aroma a native heirloom cacao species and crown jewel of the international chocolate trade. Large ruddy brown and yellow cacao pods are harvested by hand and split in half revealing bitter cacao beans within. These beans are carefully shelled cleaned sun dried and fermented to maximize their deep yet complex flavor. The beans are gently broken into small pieces resulting in simple pure and remarkably flavored nibs.
