Allicin gives garlic its traditional medicinal benefits of promoting healthy cholesterol and blood pressure. High Allicin Garlic has been used as an herbal supplement for thousands of years. Garlic's medicinal benefits are derived from the sulfuric acid alliin. When activated by the enzyme allinase, the sulfuric acid alliin converts to allicin. It's recommended that raw garlic or garlic supplements be used instead of cooked garlic because heat inactivates the enzyme allinase that converts the sulfuric acid alliin to allicin.
