Mastic: The tears of Chios
Mastic is a natural, off-white color, semitransparent resin that comes from mastic trees, in Chios Island,
in Northern Greece. This is due to under water volcanoes, the mild and dry climate and the lime consisting soil. It is secreted by superficial incisions made in trunk and branches of the tree with sharp tools and dripping in the form of tears. This process starts from mid-august to mid-september. The product is then sieved, washed and thoroughly cleaned, piece by piece.
