Shiitake, is one of the most versatile mushrooms in the kitchen. Regardless of urban legends, this mushroom is not indigenous to the United States and can only be picked in a mushroom farmer''s growing room. They contain protein, carbohydrates, fiber, linoleic acid, Vitamins B2, C, D and minerals. The marvelous flavor can stand up to any spicy dish, even replacing meat in spaghetti sauce. Saut Shiitake in butter or oil and pair with meat, pasta or rice.

Directions
To Rehydrate:
Pour enough hot water over mushrooms to cover. Soak for 30 minutes or until soft.
Place cheesecloth or coffee filter in strainer. Pour mushrooms into strainer over a bowl to catch soaking liquid. Use liquid in current dish or save for future use.
Remove cheesecloth or coffee filter leaving mushrooms in strainer. Run water over mushrooms in sink to rinse and pat dry. Recipe Inside
