Size: Three outlets in Singapore
History: Set up in 1905 by two brothers, its first outlet was a 2,000 sq ft shophouse in Rochor Road. It is now being run by third-generation owner Lim Sin Choon and his eldest son.
Best known for: It is the oldest bak kwa shop in Singapore; you will not find another vendor as traditional as this. In fact, it is so true to tradition that it refuses to sell other items besides bak kwa, pork floss and fish floss. As Mr Lim puts it: 'We're not a provision shop.'
Taste test: This is bak kwa of the slow food school. Each slice is a piece of evenly flavoured meaty goodness meant to be savoured at leisure. At first bite, it might be chewy. But the longer you chomp away, the more the aroma seeps out. The meat is fibrous; even pork floss-like. That's two treats for the price of one, if you ask me.
