Taiwan Handmade Ginger Black Sugar 

Taiwan Handmade Ginger Black Sugar is made from pesticide free sugar canes from Taiwan’s Guan Mountain ranges and our specially selected highland gingers.

Brewed and made traditionally, it is preservative free and wholly natural with no flavor or chemical additives. As a result the health benefits of this product is immense.

Unlike white sugar which is fully refined or brown sugar which is white sugar with some molasses added in. Black Sugar is the real raw component when sugar cane is processed. Due to the fact that it is unrefined. Black sugar retains the original molasses, potassium, iron, calcium and other minerals, as a result it is a sweet but healthy product if used moderately.

In Taiwan and Japan. Black Sugar is used extensively by women during the menstrual cycle to soothe the pain. This is due to the high amounts of iron and calcium within the product.

As our product comes with Ginger added in, the double benefits of Ginger and Black sugar are presented in one product that helps to fend off the cold, help in painful periods and is the real true natural sugar which is nutritious and healthy.

1. 1L of water

2. Prepare about 5g of Dried Ginger Slices.

3. Put Ginger Slices into the Pot of Water.

4. Bring to boil and keep it boiling about 5 mins.

5. Lower the fire down to low (very slow bubbling) and cook for another 90 mins. 

6. Ensure it is covered while boiling.

7. You should have quite a large amount of water left after 90 mins.

9. Add in 3 to 4 Teaspoons of Black Ginger Sugar when near finishing.

10. Lightly Stir before serving or add more Black Ginger Sugar if you find it not sweet enough.

《纯手工黑糖》制糖原料:甘蔗采收
制黑糖的原料是甘蔗。甘蔗的生长期一般为12-18月,每年秋季到春季是甘蔗的种植期。甘蔗主要区分为生食及制糖两个用途,台湾俗称红甘蔗的拔地拉(Badila)甘蔗甜度约12.5度,以生食为主。制糖用甘蔗俗称为白甘蔗,是改良后的品种,甜度约22度,糖分高,适合制糖,但因纤维多,肉质较硬,不适合生食​​。
本手工黑糖使用的原料甘蔗,主要种在关山里的山区,远离尘嚣与污染,气候适宜,土质优良,故能生产出优质的黑糖。
民国70年代之前,台糖公司处于营运盛期,每年冬季甘蔗采收期,平地蔗园多以机械采收,而山区则以人工采收。男人用锄头将甘蔗一支一支地铲下,妇女手持镰刀整理甘蔗。载运甘蔗的除了卡车、搬运车之外,还有牛车。

《纯手工黑糖》全程手工制糖过程
日治时代之前,台湾制糖全部采用手工,通常都在甘蔗园旁以竹木搭建糖廍,屋顶及四周覆盖甘蔗叶或稻草,外观成钟型状。
糖廍内两个主要的设备,一是锅灶,通常使用大口径的「孔明鼎」熬煮糖汁,以木材为燃料。二是榨蔗汁用的辘车,早期用坚硬的木头或石头雕凿而成,但不耐用,后来才改以钢铁铸成。

现在手工生产黑糖,已看不见传统草寮的糖廍,与昔日相较,最大的不同是现在使用电力榨蔗机取代传统的牛力辘车,大幅提升工作效率。至于糖汁熬煮成黑糖大体上仍维持传统的作法,但更讲求设备与制作的卫生。

【纯手工黑糖】糖廍内的炉灶配备了七口孔明大鼎,分别熬煮不同浓度的糖汁与糖浆,所以熬炼出来的黑糖品质能维持很高的稳定性。至于炉灶用的燃料,师傅舍去较省事的重油,依循古法,完全使用龙眼树及其他硬质木头当材火。所以每年黑糖产季之前,必须雇请工人搜集大量的木材备用。师傅强调,这样费事,熬炼出来的黑糖才能表现出道地的古香味。

为了迎合消费者的需求,【纯手工黑糖】制做的黑糖,在口味上,味道浓郁纯正,口感极佳。手工生产黑糖不仅讲求经验与技术,而且很费时费力。做糖的当天,凌晨即起,开炉热锅、压榨蔗汁,第一锅费时长达6-7个小时才能起锅。之后,在热灶下,每锅糖制成时间仍须4-5小时。

当熬煮的糖桨火侯到达时,师傅立即用大杓子将糖桨舀到处理台内,接着持工具不停搅拌糖桨使其冷却。随着热气的蒸散,滚热糖桨很快地结晶成黑糖。此时带有温度的黑糖,发出浓郁诱人的焦蔗香味,真令人垂涎三尺!手工黑糖是纯自然的农产加工品。
手工黑糖是纯自然的农产加工品,不含任何添加物及防腐剂,而所含的水分亦较砂糖为高,所以购买后要注意保存。一定要使用密封袋罐,每次使用后要将封口封妥,避免受潮或阳光曝晒。
