(Simplified version)

sun + paper with Berlin Green = Prussian Blue (area exposed to sunlight)

paper with Berlin Green = washable in water (area not exposed to sunlight)

When you rinse with water, you wash away Berlin Green turning the impression white. Prussian Blue, which is the exposed area, is not soluble in water and remains blue.
