Blueberry Chia Jam
This refrigerator jam takes advantages of the gelling quality of chia seed, using it as a nutrient-rich substitute for pectin.
3 cups fresh Blueberries
¼ cup Agave Nectar
¼ cup Chia Seed
½ tsp Vanilla Extract
Combine berries and agave in a small saucepan.
Cook over medium heat until berries begin to soften and burst, about 5 minutes.
Add Chia Seed and cook, stirring often, until very thick, about 15 minutes.
Remove from heat and let cool.
Add vanilla extract.
Refrigerate up to 7 days.
Makes 10 serving
